Almost all baby seats can be secured with just a lap belt. Most compress the shoulder strap making it the “same” as a lap belt anyways.
Any car seat can be strapped with just the lap belt. Because of the way most of them work the lap belt is usually safer than the ones that have a shoulder strap included-the ones with shoulder straps let you pull them out some while the la belts are SET and can not be pulled out naymore than where you have them at.
As far as I know any of them can. The Graco’s for sure can for an infant seat. The Britax’s can and I’m sure there are loads of others that can. Check the box when you are purchasing, the infant seats don’t have to have the base either to be buckled in. The passat isn’t small (mine got totaled in jan
) but I would go to your local fire department and see if all three car/booster seats will fit in the back. For an awesome parenting site (with a forum exclusive to carseats) go to:

EDITED TO ADD, Most shoulder belts have a safety feature for carseats where if you pull it out completely it will wind and the only way it will losen again is if it goes back in completely. Some older cars don’t have this feature but I believe it was implemented in all cars around 95-96.
Older children should be using the lap and shoulder belt with a booster seat, or a 4 year old can still be in a car seat (this is safest). An infant carrier is usualy secured with just the lap belt, either using a snap-in base, or by threading the belt through the top notches of the infant seat and tightening while baby is in the seat. The base is generally easier to tighten and is more secure.
Absolutly not. Sorry about that, but it’s just not safe. The majority of vehicles now have a full seat belt in the middle seat.
My only other advice is to disable the airbag in the passenger seat and have a seat there.
Almost all car seats should allow for securing with a lap belt only.
Although, when your child is “booster-size” you must use ave a lap/shoulder belt, as this places the belts at a safe position for the child and keeps the torso from flying forward in a frontal collision.
So the boys should be on the outside seats in boosters and the baby in the middle.
